3.7v at 5000mah isn't going to be a real option with the GC. It would require you stepping up the voltage. Your battery life would be drastically shortened compared to running two of those cells. You want to go with 7.4v. (2 of 3.7v cells) As for a 5" TFT that would reliable run off of 3.7v, I ...

Soldering looks good! Trace should not affect it as long as it is after where you are soldering to and it is not shorting. To remove hot glue use rubbing alcohol.
use a q-tip to get it on and and let is soak.
Rubbing alcohol is handy for cleaning as well, cart connections and all.

Nice to see a new GCP log here. Looks like you have everything figured out. You might want to look into an amp/speaker combo like Ashen uses. (Powered, Portable iPod Speakers.)
