Probably the later ones that re-initialise the BBA and have their own IP you can edit via HEX editor. The defaults are 192.168.0.32 for the cube and 192.168.0.100 for the PC.

You can but I believe some of the earlier ones rely on the BBA already being set up perhaps. I intend to retry these and post some comparison videos vs Swiss loading from SD.

I gave the s3-gcsim repack a try with "Cubesphere 1.0 PC GCM Server - Experience (LINUX)" running on my RPi 1 Model B and it worked with 10MBIT Full Duplex mode. It's pretty horrible but maybe the 100MBIT mode would be better if I can get that working I'll make a comparison video between it + Swiss running the same thing from SD.
Launching s3-gcsim or any of these loaders appears to require a working drive with a disc inserted, if you boot from a device cold that hasn't initialised the DVD drive prior to it (such as via flash on Qoob PRO), it will fail, in that case, use Swiss first and then load the DOL from there. It doesn't require the BBA to have been previously set up at all by PSO or anything either.
