In terms of functionnality, all are based on GCVideo firmware, which will do the job pretty well, the only difference you'll see is the finish and price for those you'll find on the Chinese market:

Bitfunx/Kaico: Pros: full size hdmi connector, metal based digital AV connector, professionnal looking aluminum enclosure. Cons: long and heavy adapter, if you don't want to sacrifice vents with the provided supporting add-on.

GCplug: Pros: Cheapness (while relative nowadays), short with light mini-hdmi connector. Cons: Cheap 3D printed AV connector and enclosure.

You also have some US produced ones, such as Carby, retro-bit prism and EON GCHD, some offer Wii-kind connector for component and RGB-SCART, Toslink optical out, and so on, for a bigger price.
Regarding digital audio out, keep in mind that Dolby-Prologic II decoding doesn't seem to be supported by digital era receivers/decoders.

Be aware that analog connector converters won't allow you to use EDTV modes, and are absolute crap, I recently got one from Alix (order error), and tried it before sending it back, just to see. I was expecting it to be bad, but I wasn't ready for how bad it was! It's the worst video output I've ever seen on a console in my whole life, even GC's RF modulator gives better picture, and by far! It is unacceptable how bad it is, it just looks like a defective product.
