If you have a PAL cube, Super Mario Sunshine. Next, for PAL/NTSC, Wind Waker/Twilight Princess. But in the end, each save game exploit has same outcome, it only depends how much money you want to throw against an exploitable game 
I have 2 super mario sunshine games, and 2 splinter cell ones. Splinter cell is very cheap, and it is easy to trigger the exploit.

There are many things to keep in mind for the choice of the Game to be exploited, some offer more comfort, while some others offer more flexibility, such as the ability to save for the "same" game on the same MC where you have the save exploit (only possible when two distinct game IDs existed for the same game). Some are quite complex and hazardous to use and sometimes fail, it's the case for SSBM and F-Zero GX.
Then, you have to choose if you want to get a full version of SWISS on a MC, or only a boot forwarder, and wich one, in the later case. That would impact the number of blocks used on the MC, the ease of updating, how fast you can access to SWISS or any homebrew, the accessories compatibility at boot, the naming of the homebrews you want to load off your SD from the save exploit…
