If you have access to homebrew (GC or Wii), you can copy your saves with gcmm.
The actual editing requires knowledge of the save format which isn't always easy to reverse engineer. Many games also have a checksum and reject the save outright if it's broken.

Nobody ever takes this approach. It's much easier to use cheats to get the desired effect during gameplay and then let the game save normally.
