Getting best GameCube video quality

I have a DOL-001 NTSC GameCube and I have it hooked up to my 7" LCD via AV and it looks like crap.

It's difficult to capture the crummy quality of the LCD with a crummy camera. Anyways here's what the cable looks like...
Image Image EDIT: Made this pic. After some research and testing I found out what the pins are.
I think Ashen used this LCD in one or more of his portables. Is there a way to improve the quality without having to get some kind of converter? (I'll still be into buying something if not.) Anyone know anything about this LCD? I'm debating on weather I should get an Scart or an original GameCube S-Video AV Component Cable.

have you tried to display anything else other than GC on that LCD?
maybe the LCD is just cheap horrible quality...

Yes the LCD is pretty good quality on my brothers Pi. (The Pi AV out isn't exactly amazing on any monitor.)
The video is coming directly from the composite out in the back of the GC.

I know, sketchy solder job. I also used the LCD that he (My brother) is currently using for his Raspberry Pi on the GC, and its smaller, but it doesn't look to good from that one either.

So I figured out a way to use the s-video out on the NTSC GameCube as composite using this diagram...
