Auto boot Swiss & load Backups
My goal is to be able to boot GameCube automatically into Swiss and then use Swiss to load game backups without requiring that I swap discs or SD cards.
I also want to be able to use my GameCube Player with Game Boy Interface.
What (if any) hardware mods would I need to perform to be able to do this most easily in 2019?

Your options are:
- xenogc with a Swiss DVD, also allows booting DVD backups directly
- qoob or viper with iplboot + Swiss on SD, Swiss as a "plugin", or a Swiss DVD; Swiss, Cobra and the Qoob BIOS allow booting DVD backups directly
- wiikey/wasp fusion or wode (best compatibility for backups on an SD card, but expensive and requires removing your DVD drive)

Are they readily available?
How hard are they to install?
Will I be able to use a 200 gig plus SD card?

There's no best way. You'll have to look for someone who has one and is willing to sell it. They're fairly rare nowadays.
Difficulty of installation depends on the adapter that you get for it, but it'll most likely require soldering.
I think big SD cards will work on wode, which also supports USB drives. WKF and wasp will accept large cards but you'll only be able to read the first 64GB.

WODE is also a bit slow and clunky to use since it was originally intended to simulate the disc drive as accurately as possible, including the slow "eject" and disc init parts of the process. It also takes at least 20-30 seconds to read the contents of a moderately filled SD card (30-40 games).
I'd recommend something short term like SDML or a XenoGC + Swiss on DVD-R, or even a save game exploit until the new drive emulators hit the public at some point.

Definitely looking forward to new drive emulators coming out. Just getting into Gamecube myself and have a XenoGC I installed, but would love an ODE so I don't have to keep burning mini DVD-R discs. Heh.

Use an SD gecko to load backups, it's cheap and you can reuse the card later with any ode you buy.

What are the advantages of using a mod chip+ode+HDMI vs using a modded Wii to play GameCube games? Would I be able to use the widescreen hack with that GameCube setup?
